French Onion Soup

Ingredients

750 gm onions

1 ½ tbsp butter / oil

Salt and pepper

Pinch of sweetener

1 ½ liter veg clear stock

100 ml white wine

Garnish

 Whole wheat bread croutons

100 gm low fat grated cheese

 

 Method

Cook sliced onions in butter or oil until soft. Remove pan lid and raise heat to a moderate flame. Stir in seasoning and sweetener. Cook for 30-40 minutes, stirring frequently.

Allow onions to turn a deep brown. Cook for 3 minutes. Pour in hot stock and stir to blend. Add wine. Simmer for a while.  Serve along with croutons and cheese in a bowl serve hot.
